Salsa Verde

Gosh, how time flies.  Having been away for quite some time,  I am happy to be back home.   The last few days, I have easing myself back in and settling into my usual routine, replenishing my pantry.  One of the things I like to have in the pantry is a bottle of salsa verde which literally means green sauce.  I use whatever herbs I have around and for this recipe I used parsley, nasturtium leaves and rocket.  It is great on meat, mix with feta cheese for a spread or add a dollop to your omelette, it is just so versatile.

Ingredients

1/2 bunch of parsley
1/2 bunch of rocket
a handful of nasturtium leaves
a few anchovies, finely chopped
6 cloves of peeled garlic, finely chopped
1 tbs capers, coarsely chopped
extra virgin olive oil
black pepper

Method

Chop herbs finely.,
Add the anchovies, garlic and capers to the chopped herbs.
Add olive oil, just enough to give a nice consistency.
Season with black pepper.
