Pomelo Salad with Pork Cracklings

When I walked into my garden this morning and saw this big yellow pomelo which has just fallen from the tree, I knew exactly what we will be having for lunch – Pomelo Salad with Pork Cracklings.   I have some skins from the pork cheeks which I have cooked yesterday to make pork rillette and it will be perfect with the pomelo salad.


butter lettuce or mixed green salad
1 tomato sliced thinly
mint leaves chopped
coriander leaves shredded
1 pomelo (peel and remove the flesh)
pork cracklings

1 tablespoons fish sauce
1/2 – tablespoon fresh lime juice
1 tablespoon water or whey
1 tablespoons palm sugar
1 teaspoon garlic chilli paste (optional)
1/2 tablespoon macadamia paste (optional)


Prepare the dressing: combine fish sauce, lime juice, water, sugar, garlic chilli paste, macadamia paste in a small bowl and stir until to dissolve the sugar.

Before serving, assemble the green salad, tomato, herbs  and pomelo .   Add the dressing and toss to combine.

Add pork cracklings.
