When I spotted some kingfish collars recently at the market, I was excited. The “odd bits” of fish – the head, tail and collars – are wonderfully tasty.
I love the Japanese style of preparing fish collars which is to simply season with some salt and grill to enjoy the full flavour.
I served it with a citrus dipping sauce.
Recipe for Citrus Dipping Sauce
- 2 TBS Coconut Aminos
- 1 TBS lime juice
- 1 TBS orange juice
- 1 TSP rice vinegar
- 1 TSP mirin
- 1/2 TSP grated ginger
- 1 TSP grated black radish
- sesame seed (optional)
