Grilled Fish Collars & Citrus Dipping Sauce

When I spotted some kingfish collars recently at the market,  I was excited.  The “odd bits” of fish – the head, tail and collars – are wonderfully tasty.

I love the Japanese style of preparing  fish collars which is to simply season with some salt and grill to enjoy the full flavour.

I served it with a citrus dipping sauce.

Recipe for Citrus Dipping Sauce

  • 2 TBS Coconut Aminos
  • 1 TBS lime juice
  • 1 TBS orange juice
  • 1 TSP rice vinegar
  • 1 TSP mirin
  • 1/2 TSP grated ginger
  • 1 TSP grated black radish
  • sesame seed (optional)

Mix all the ingredients together for the sauce..
